After months of cozying up by the fire, we’re ready to trade in our winter boots for lighter layers, open the windows, and welcome the season of renewal. And here in New England, spring isn’t just about blooming flowers and chirping birds—it’s maple syrup season!
That means sugarhouses are firing up their evaporators, tree taps are flowing, and the air is filled with that sweet, unmistakable scent of maple steam. 🍁 If you ask us, there’s no better way to welcome spring than with a little liquid gold, straight from our local sugarmakers and we just restocked our supply with a fresh new batch of syrup.
Fun fact: Did you know that spring 2025 officially starts on March 19, making it the earliest spring equinox since 1796? From this point forward, we’ll get more daylight than darkness each day—so soak up that extra sunshine and get ready for the sweetest season of the year! 🌞💛
The Sweet Science Behind the Syrup
So, how does this magic happen? It all starts with Mother Nature’s perfect recipe—warm days and chilly nights. As the temperatures rise above freezing during the day but drop below at night, sap starts flowing through sugar maples.
The process has been around for centuries, dating back to Indigenous communities who first discovered how to collect and boil down sap into syrup. Today, our local sugarmakers carry on the tradition with modern methods and with the same old-fashioned patience. It takes about 40 gallons of sap to make just one gallon of syrup, making each bottle a true labor of love. Now you know why PURE maple syrup costs so much more than the fake maple-flavored corn syrup sold at your local supermarket!
How It’s Made: From Tree to Table
Making maple syrup is both an art and a science. Here’s how it happens:
Step 1: Tapping the Trees 🌳
Around late winter to early spring, sugar maple trees are tapped by drilling a small hole into the trunk and inserting a spout (called a spile). Buckets or tubing systems are attached to collect the sap as it slowly drips out.
Step 2: Collecting the Sap 🪣
On the best sugaring days, when nights dip below freezing and days warm up, the sap flows steadily. Each tree can yield anywhere from 5 to 15 gallons of sap per season! While sap looks like water and has only a faint sweetness, it holds the potential for something incredible.
Step 3: Transporting to the Sugarhouse 🚜
Once collected, the sap is transported—often by buckets, tanks, or tubing—to the sugarhouse, where the real transformation begins.
Step 4: Boiling and Evaporation 🔥
The sugarhouse is where the magic happens! The sap is poured into a large, wood-fired evaporator and heated to remove excess water. Since sap is 98% water, this boiling process concentrates the sugars.

The sap must reach 219°F before it turns into syrup.

This step requires constant monitoring—boil too long, and you get maple candy; too short, and it won’t thicken properly!

Step 5: Filtering and Bottling 🍶
Once thickened to perfection, the syrup is filtered to remove impurities, then bottled and ready to enjoy!
